What I Eat in a Day

I was inspired to make my latest video because I am a lover of good vegetarian meals. Food is a huge part of my health and fitness journey. It really impacts how I feel, and I want to share my enthusiasm for healthy food with people. I also included a talk about how I have changed my mindset around food. As a teen girl, I occasionally struggle the pressures of society to look perfect. That attachment to my body lead to obsessive thinking about food. How much should I eat? Does my body look different? Is this food healthy? It was exhausting. Here’s the deal, no one is perfect. It is unrealistic to set such high expectations for yourself. Now, my focus is to make sure my body is getting the fuel it needs. Working out is a huge part of my life, so it is important I give my body adequate protein to fuel my next workout. I hope my new mindset inspires young girls to look at food as fuel, not something to be stressed about.

Light breakfast!

I am a huge breakfast girl. It is the best meal of the day in my eyes. I didn’t have a huge appetite this morning, so I went with my fav light breakfast. It is a mango banana protein smoothie. The key to this is adding vegan protein powder by Steel. This one is amazing and light on the stomach unlike some protein powders. 20 grams of protein and it tastes like ice cream. I also make avocado toast to get some carbs and healthy fats in!

I love making bowls because they are so versatile and great for meal prep. You can use these veggies all throughout the week in different meal variations. To cut down on time, pre-cut the veggies and make quinoa so the process goes by faster. I was so hungry making this because it took about an hour to prepare everything. Also, I would skip the avocado sauce and just add sliced avocados. Just a personal preference. I can’t stop making this veggie bowl. It is a must try! Don’t forget to add pepitas because they make a perfect topping. Click here for the recipe.
